Prosecco DOC Millesimato Brut Rosé

Prosecco Rosé Bosco del Merlo is composed of 85% Glera and 15% Pinot Noir vinified in red and with a slightly lower yield per hectare in order to have a greater colouing intensity and greater richness in aromas. These grapes are harvested in different periods seeking the balance between the characters of these two wines while preserving their freshness and aromas.

The must obtained after the soft pressing of the grapes is fermented at low temperatures (15°C) in order to enhance its freshness and fruity notes. The Charmat method is used for the sparkling process: the second fermentation takes place in an autoclave, at low temperatures and frequent battonage, in order to enhance the fragrance and the finesse of the perlage. The processing period averages over 60 days.

 

In Tasting

The colour is a brilliant shade of pink and has a fine and persistent perlage. The scent is very fresh and floral. Very pleasant on the palate where there is an explosion of freshness, but also a sensation of body given by the flavor and taste-olfactory persistence of the fruity and floral sensations.

Pairings
